RSVP Needed

Please RSVP to President Tori no later than Tuesday, December 5 to attend the annual Service Clubs Holiday Luncheon on Tuesday, December 12th at 12noon in the West Dining Hall, Hoke, at EOU. Parking is free in the Hoke lot that day.

This is the Rotary’s annual event to celebrate service clubs making a difference. Lunch is served and the LHS Choir performs. The buffet menu includes Caesar salad, breadsticks, pasta/sauces, grilled chicken/meatballs, roasted veggies, Italian cream cake. The cost per person is $15.

This event often runs beyond 1pm by a bit so consider sitting near the door if you need to get back to work. 🙂

 

 

Wassail Invite

NEOAHEC & OHSU School of Nursing invite Soroptimist members to attend their Holiday Wassail and open house on December 6th, 2:30-5pm, Badgley Hall, 3rd floor foyer, at EOU. Learn about programs, network and enjoy goodies! Thank you for supporting Girls in Science!

Please RSVP to President Tori no later than Tuesday, December 5th.  It is especially nice when we have a nice group of Soroptimists able to attend and represent our wonderful club, as well as the fun that comes with mingling with the other clubs in our valley!

Easy Weeknight Dinner

That subject line is an eye-catcher for any busy Mom or Soroptimist member that’s scanning their email inbox! “One Pot Penne Pasta” from the Add A Pinch website can be ready in 15 minutes, making it a perfect recipe for a busy weeknight! Here is the recipe:

  • 1 pound smoked sausage, cut into bite sized slices
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 3 cups penne pasta, uncooked
  • 2 cups chicken stock
  • 1 (10-oz) jar roasted red peppers, undrained
  • 2 cups Monterey Jack cheese
  • 1/2 cup Parmesan cheese
  • 2 cups fresh spinach
  1. Add sausage, onions, garlic, and mushrooms to a medium pot over medium heat.  Cook until onions are slightly tender, stirring often.  Add in penne pasta, chicken stock, roasted red peppers, along with the liquid from the jar, cheeses and spinach.  Stir to combine and cover for about 5-8 minutes.  Remove lid, stir and continue to cook until penne pasta is al denote or at the amount of tenderness you prefer.  Remove from heat and serve.

Raffle Ticket Sales Opportunity

Interested in selling your (or more) Festival raffle tickets? Di is setting up a table at Safeway next week and needs volunteers to fill shifts from 9am-2pm, somewhere in the November 17-19 date range, by the Starbuck’s entrance. If you are interested, contact Di via phone or email to nail down the specific day and time so you can sell, sell, sell! Support the raffle, support our scholarship program!

Board Meeting This Week

SILG Board Meeting is this week, Thursday, November 2nd, 12noon at Denny’s in the Meeting Room. This meeting is open to all members. Why would all members want to attend? To learn about the inner workings of our club. To hear the deeper-detailed discussions. To share perspective that might be otherwise missed. To understand our club history and why it may or may not be relevant today as we make decisions about our future. Sounds pretty interesting, eh? Lately our Board Meetings have been just as large in number as our regular club meetings, which is pretty cool! New members are especially welcome to attend…and Denny’s is very fast to get us in and out!
