Greetings! I hope all members are enjoying summer now that it has finally arrived!
Just popping in to share an easy recipe that I’ve used recently for summer gatherings. Crockpot Mac ‘N Cheese is a simple dinner or potluck item that is yummy, loved by all ages, and doesn’t require standing over a hot range or heating up your kitchen with the oven! (I bet you could even add some ham, bacon, or other extras and make it a meal!)
CROCKPOT MAC ‘N CHEESE
(Serves 6-8)
½ cup melted butter
2 cups uncooked elbow macaroni
3 cups small curd cottage cheese
2 cups grated sharp cheddar cheese
2 ½ cups boiling water
Pour melted butter into bottom of crock pot.
Add uncooked noodles, cottage cheese, and 1 ½ cups of the grated cheddar. Stir to combine.
Pour boiling water over the mixture and do not stir after pouring water in.
Cook on high for two hours.
Sprinkle remaining cheddar on top and let sit for 15 minutes before serving.
Double all ingredients for larger crowds!
